Oven-Fried Eggplant

Ingredients

Instructions

  1. Combine the mayonnaise and onion, then spread evenly over both sides of each eggplant slice. Combine the breadcrumbs, cheese and Italian seasoning, then coat both sides of each slice.
  2. Bake at 425 for 12 minutes, then turn the slices and bake 12 more minutes, or until golden.
  3. Plate and serve.
